16 oz can of chickpeas

1/3 cup fresh lemon juice

2 T tahini (sesame paste) for each cup of chickpeas

3 cloves of garlic, chopped

1 tsp salt

1 T ground cumin

1/2 c water

2 tsp olive oil

Garnish: sumac, olive oil

Combine all of the ingredients in a food processor until smooth.  Let the Cuisinart run for longer than you think. Plate the hummus and use a spatula to make a moat. Garnish by drizzling extra virgin olive oil and sprinkle sumac over the hummus.
